Pancakes For Breakfast

I really enjoy baking and I love breakfast.  Here is a really yummy pancake recipe from Donna Hay.   It is also really nice just as plain pancakes with your own toppings, if you don't have or like blueberries and maple syrup.  
Ava has hers with butter, while Geech and Kitchen like theirs with butter and maple syrup.
blueberry pancakes with maple syrup
  • 2 cups plain flour, sifted
  • 3 teaspoons baking powder, sifted
  • 1/2 cup caster sugar
  • 2 eggs
  • 2 1/4 cups milk
  • 75g butter, melted
  • 3/4 cup frozen blueberries
  • fresh blueberries, to serve
  • maple syrup, to serve
  • icing sugar, for dusting
Place flour, baking powder and sugar in a bowl and make a well in the centre. Combine the eggs, milk and butter, gradually pour in the well and whisk until smooth.  Stir in the frozen blueberries.  Heat a lightly greased non-stick frying pan over low heat.  Cook 1/4 cups of the mixture for 2 minutes or until bubbles appear on the surface. Flip on cook for a further 1-2 minutes or until golden. Repeat with the remaining mixture.  Stack the pancakes, top with fresh blueberries, pour over the maple syrup and dust with icing sugar.  Makes 16
