Today while Ava was at Playgroup, Piper and I went over to see my friend, Kerrie and her two gorgeous boys: Will and Tate.
While Kerrie and I ate chocolate cake and biscuits, Piper fell out of a swing (This was actually my fault. I'm sorry Piper. xx) and rode bikes with Will.
Will shared his lollies with Piper.
And Tate, who is 8 months old, spent his time looking gorgeous and smiling.
I promised Kerrie the recipe for the biscuits and I thought I should also share it with you.
They are called 'Frosted Cherry Rings' but I cut mine into hearts and they are from the recipe book 'Frame>By>Frame Baking'
ingredients
115g butter
85g caster sugar
1 egg yolk
finely grated rind of 1/2 lemon
200g plain flour
55g glazed cherries, finely chopped
icing
85g icing sugar, sifted
1.5 tablespoons lemon juice
1. Preheat the oven to 200 deg cel. Lightly grease two baking trays.
2. Cream together the butter and caster sugar until pale and fluffy. Beat in the egg yolk and lemon rind.
3. Sift in the flour, stir, then add the glazed cherries, mixing with your hands to make a soft dough.
4. Roll out the dough on a lightly floured surface to about 5mm thick. Stamp out each biscuit with a cookie cutter. They have used two round cutters, but I used a heart.
5. The book then says to "Bake in the oven for 12-15 mins or until firm and golden." We have a really old oven and I found that I only needed to bake them for 5 mins. My biscuits were still soft when I took them out, but I didn't want them crunchy. I guess it just depends on your oven and how you like your biscuits.
6. Allow to cool on a wire rack.
8. For the frosting, mix the icing sugar to a smooth paste with the lemon juice. Drizzle over the biscuits and leave until set.
It makes about 12 biscuits, but you won't really want to share them.
Also, if you're wondering, yes, I am still detoxing and no, I couldn't resist the chocolate cake or the biscuits. xx
